Today turned in to one of those days. I was up at 4:45 am to workout, and was NOT feeling well at all. I still completed a 60 minute elliptical workout, and I was very pleased with that. Tomorrow, I plan to do some sprint intervals on the treadmill, and then some lifting and ab work. This afternoon, I was thinking I'd come home today completely exhausted and feeling like crap.
While I do feel less than stellar... I wound up in a cooking frenzy. In addition to the tofu-veggie stir fry I threw over brown rice (with tons of leftovers), I wound up baking a spaghetti squash, making Happy Herbivore Apple Biscuits to grab in the morning, and chopping veggies and fruit for salads and snacks. I got the idea forever ago to do this from somewhere (I think it was a blog?)...

Now - time to relax! One more exciting thing though that I am really starting to look forward to... In two weeks, Rip Esselstyn is coming to my local Whole Foods Market, and I was able to snag some tickets to see his lecture! I am beyond excited, and will absolutely be getting pictures for the blog. (Goal: pic with Rip!)

While I am not entirely plant based (I try!!) and include some oils in my cooking, I really do believe that there is something to this type of diet, and am very excited to see this lecture!
